Laurent Brouard
Operations & Culinary Director

Laurent Brouard’s culinary career began early on, inspired by his grandfather’s work at a charcuterie in Paris which led him to develop a love and respect for quality and tradition. Backed with four years of French culinary education at Ecole Hoteliere de Paris, and over 27 years of French cooking experience (including helming his own bistro, Jules, in Hong Kong), Laurent took over the kitchen at Bistro du Vin (Les Amis Group) in 2017 as Group Executive Chef, where he elevated the cuisine to its current state with his traditional French cuisine.

Chef Laurent has infused flavors from his global travels – to France, London, Japan, Hong Kong, and Singapore – into his dishes, bringing acclaim from diners alike.

Today, Chef Laurent Brouard can be found at the iconic 35 Robinson Road, shaping Aether House Singapore as Operations & Culinary Director, continuing to share his knowledge of traditional French recipes.

 

 
Christophe La Chon
Wine Consultant

Chris is Aether House's wine consultant.
Project Manager for Aether House's parent company, Aether wines & Spirits since 2019, Chris has extensive tasting experience in numerous international and French wine markets, he is passionate about wine education.

Chris was born and raised in Paris, France and he's Aether House's go-to person for everything related to wine, wine tasting events, and wine distribution.



Bryan Goh
Sous Chef

Born and raised in Singapore, Bryan started his culinary journey at Institut Paul Bocuse ITE Singapore. After graduating in 2019, Bryan sought opportunities to further develop his own creativity.

His culinary repertoire flourished as Chef de Partie at Bistro du Vin (Les Amis Group), overlooking daily operations, followed by a Sous Chef position under Executive Chef Laurent Brouard, where he developed and refined his French culinary techniques.

Currently, Bryan is working alongside Chef Laurent Brouard as Sous Chef at Aether House Singapore.

 

 

 

Lex Choo
Head Barista

Lex's story with coffee begins in 2012 after attending a tasting session on how to discern the flavour in filter coffee, this first experience helped him develop an interest and passion for the café culture.

In 2016, Lex sought opportunities to further develop his own creativity and took over the position of Head Barista at Little Big Coffee Roasters and Percolate Singapore, where he perfected his barista techniques.

Lex’s obsession with coffee and his passion for quality led him to begin roasting coffee beans on its own, attempting to learn everything about coffee and how to perfect it as a drink.

In 2021, Lex Choo joins “Aether House Singapore” as Head barista where he spread his extensive knowledge and love for coffee.
